Marquee is proud to continue our recession busting techniques through the addition of several new wines from the "old world" that provide an outstanding value for the money and new vintages from our partners across in the "new world". DEVASTATING AUSSIE BUSHFIRES - Our sympathies and hearts go out to our brothers/sisters across the world in Victoria, Australia that were ravaged in early 2009 by the deadliest bushfires in Australian history! With thousands of people left homeless and in shock of how fast and furious these fires were, we wish these partners the best of luck in rebuilding from this tragedy.
NEW WINES FROM SPAIN - Bodegas La Purísima from Yecla in the South of Spain brings us OId Hands and Trapio; three big, rich Monastrell based wines and one light white Sauvignon Blanc! A tribute to the "Old Hands" of his grandfather, these wines have a great depth of character while remaining elegant and refined.
A DIP INTO PORTUGAL - Portuguese Vinho Verde is a refreshing light wine and with the Clemen Reserva; Marquee has found an outstanding example of this style made from 50% Alvarinho and 50% Tradjadura, a delicious spring, summer wine!
NEW RELEASES FROM ARGENTINA - The Symphony Series from Caligiore continues to grow as we bring in the 2008 Vintage wines of Staccato, Grazioso (100% Torrontes) and we announce the release of our first blush wine the Pianissimo Malbec rosé!
For your spring tasting delight, we give our "ode to Spain" with a dish that pairs perfectly with our new Old Hands Sauvignon Blanc, Home-Style Paella!

Home-Style Paella
½ pound large shrimp
4 ½ cups chicken broth
1 pound green beans
1 cup green peas, raw or frozen
½ pound fresh tomatoes
1 pound boneless, skinless chicken leg or thigh meat (5 to 7 thighs, boned and skinned)
¼ cup olive oil
Salt and freshly ground pepper
1 large onion, chopped
2 cloves garlic, chopped
½ cup dry white wine (Old Hands Sauvignon Blanc)
Pinch of saffron
2 cups medium-grain rice
2 tablespoons chopped parsley
Juice from 1 full lemon
½ pound cooked mild smoked sausage, sliced
1. Peel the shrimp. Set the shrimp aside and put the shells in a large saucepan with the chicken broth. Boil the shells for 5 minutes, then let them steep until the broth is to be added to the paella.

2. Trim the beans, cut them into 1-inch pieces and cook them with ¼ cup of the broth either in a covered pan on the stove or in a microwave-safe bowl in the microwave oven until thoroughly soft. Add the peas to the beans and set aside.

3. Cut the tomatoes in half, squeeze out and discard the seeds and grate the tomatoes on a coarse grater.

4. Cut the chicken into 1-inch pieces.

5. In a large sauté pan (or paella pan if you have one), heat 2 tablespoons of the oil and brown the chicken in it, seasoning lightly with salt and pepper. Remove the chicken pieces to a bowl and set them aside. Add the remaining 2 tablespoons of the oil and lightly brown the onion. As the onion starts to brown, add the garlic and wine and season lightly with salt and pepper. Use a flat spoon or spatula to scrape up and dissolve any browned bits stuck to the pan. Let the wine boil down to light syrup, then add the grated tomato and the saffron. Let the mixture cook until it is almost dry but be careful not to let it burn.

6. Now stir in the rice, turning it over repeatedly to coat it well. Strain the reserved broth to remove the shells. Add enough water, white wine, or additional broth to make 4 cups and add this liquid to the rice. Stir in the reserved chicken, cover the pan and let simmer for 10 minutes. Uncover the pan and add the reserved vegetables, parsley and lemon juice. Cover the pan and let simmer for 5 minutes longer. Uncover the pan, stir the paella well and taste for seasoning, adding salt and pepper as necessary. Arrange the shrimp and sliced sausage on top of the paella, cover the pan and let cook for 5 minutes longer. Remove the pan from the heat and let the paella stand covered for 10 to 15 minutes before serving.

Fall is officially in full swing and the team here at Marquee thought we’d share a favorite recipe of ours that pairs nicely with our Marquee Classic Shiraz, Harvest Stew!

Harvest Stew

This stew works well in the crock-pot or can be simmered on the stove for several hours.

  • 1 tablespoon olive oil
  • 1 ½ lbs boneless beef chuck (cubed)
  • ½ cup flour
  • 1 cup minced onion
  • 3 cloves garlic (minced)
  • 1 cup Marquee Classic Shiraz
  • 2 cups tomato sauce
  • 1 can beef broth
  • 2 teaspoons fresh rosemary (minced)
  • 2 bay leaves
  • Pepper (to taste)
  • 3 – 4 large carrots (chunks)
  • ½ cup celery (sliced)
  • ½ cup frozen peas
  • 1-2 large potatoes (diced)
  1. Heat the oil in a large pan over medium high heat.
  2. Dredge the meat in the flour and brown on all sides for about 5 minutes.
  3. Remove meat from pan.
  4. Add onion and garlic and sauté for 5 minutes.
  5. Add wine, tomato sauce, beef broth, rosemary, bay leaves and pepper.
  6. Bring to a boil.
  7. Add beef and simmer for 1 hour.
  8. Add the vegetables and continue to simmer for another hour, until vegetables are tender and meat is falling apart.

Good afternoon!

Its late summer in the Southern Hemisphere and our winemakers, Keith Brien and Gustavo Caligiore are hard at work, but enjoying grand weather. The weekend forecast for Melbourne, Australia is mostly sunny with a high of 78 F, while Mendoza, Argentina is a balmy 88 F degrees and breezy! Both Keith and Gustavo have hand-crafted some beautiful new vintage wines for the start of the year that are sure to impress. School's back in session, football season is upon us and Marquee is stocked and ready for our partners and friends to enjoy some great Aussie Wines during the end of 2007!
